Here are some of my most lip-smacking recipes, enjoyed by many at potlucks, reunions and other ritual events:
Non-Dairy Terrain/Loraine
Ingredients:
Whole wheat or wheat & cornmeal pie crust
Turnips, parsnips, zuchinni, carrots, green onions
Non-dairy cheese (rice or soy both work fine)
Egg
Diced olives, black or mixed
Roasted red pepper/garlic/sesame dip from deli or something similiar you invent for topping
Directions:
Cut up and steam vegetables very slightly
(you can then sautee them lightly in a little olive oil or butter, or not, depending on your health preference).
Pour into pie shell
Add beaten egg and chunks of non-dairy cheese above
Top with a mix of olives and pimentos diced small (the deli spread i used above just made it easier)
Bake for about 25 minutes in a 375 degree oven. Yum.
Scarlet Slaw - this one is deliciously raw and i feel best when i eat as much raw food/live meals as possible
Ingredients:
Equal parts grated carrots, beets and apples - just think about how many people you're feeding and estimate first.Directions:
Grate the carrots, beets, apples, & ginger in a large salad bowl.
Add honey and lemon and raisins to taste.
Tastes like coconut, texture-wise, for some reason. Very satisfying and good for you.
